This year, revelers will make an estimated 2.5 billion journeys on the train system alone, up 100 million from last year; at least another billion bus, plane and car trips add to the travel chaos. One of the major draws for migrant workers heading home is the chance to eat traditional, home-cooked meals with relatives. You won’t get through a conversation about Spring Festival, as the holiday is also known (“Spring Festival” is the literal translation of chūnjié), without a local waxing poetic about the holiday’s dishes, which vary region to region but have one very important thing in common: delicious symbolism.
